Salad Recipe with Baby Greens and Blue Cheese

Here is a quick and easy salad recipe with baby greens and blue cheese. It’s versatile because you can basically make this with any type of greens as well as your favorite berries! Greens are known to offer up a lot of nutrition, while berries are rich in antioxidants to help rid the body of chemicals and toxins that slow you down.

I used a homemade vinaigrette, which allows you to make it as sweet as you need to for the picky eaters around your table.

Another bonus of this salad is that it’ll go with just about any meat dish that you set on the table. It’s also great on it’s own if you’re looking for a healthy snack in the afternoon.

The Ingredients

Baby Greens. Use any baby greens that you like. Any baby mixed greens, spring mixes, etc… they all taste great in this salad recipe. You could even use romaine or iceberg lettuce if you like.

Berries. I used fresh strawberries and blueberries here. But why not also try raspberries, blackberries and mulberries.

I also like to have one dried berry, like goji berries or cranberries. Basically any dried berries will work, but I like the gojis because they do not contain any additional sweeteners. They can be found in health food stores or in the health food section of some grocery stores. You can also purchase them through my MyYl store with Young Living.

Blue Cheese. I love the blue cheese because it goes really well with the vinaigrette. But other cheeses can work too. Feta cheese is a good alternative.

Vinaigrette. One of my favorite dressings is my honey balsamic vinaigrette, but feel free to use whatever you like. I like to make my own because it’s just so super easy to do, and you get to control the sweeteners along with other ingredients.

Added Crunch. Toasted almonds or other nuts and seeds can be added for a nice crunchy topping. You can buy sliced almonds and then toast them yourself. How to Toast Almonds.

This versatile salad recipe with baby greens can be made with any baby greens that you have in your fridge.

Ingredients

  • 2 cups baby greens
  • 1/2 cup strawberries, sliced
  • 1/2 cup blueberries
  • 1/4 cup goji berries (dried cranberries work well too!)
  • 1/4 cup blue cheese

Dressing

  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey
  • salt and pepper to taste.

Instructions

  • Wash all your greens and fresh berries and transfer to a salad bowl. Add goji berries and blue cheese.
  • Whisk the dressing ingredients together in a small bowl, and drizzle over your salad.
  • Toss to combine and enjoy!
