Scrambled Eggs With Peppers and Mushrooms

These scrambled eggs with peppers and mushrooms are a great way to start your day! They go great with breakfast sausages or with your favorite toast and cereal.

The best thing about this recipe is that kids enjoy it, even with the peppers, onions and mushrooms. If your kids don’t take to the veggies, you can always start with less and work your way up. Eggs are very forgiving, and you can always add a bit of ketchup or mild salsa too if you want.

Eggs are a good source of protein and fats to keep your appetite balanced throughout the day. And with a scrambled eggs variation like this you’ll never get tired of enjoying a healthy breakfast.

The Eggs

Choose any eggs that you prefer, but to make it even tastier and healthier, opt for organic and free run whenever you can. Depending on where you shop, organic and free run eggs can cost more than twice as much as regular eggs, but it’s so worth it! You’ll notice the shells are much tougher, which means they are loaded with that much more nutrition. So you pay more, but you also get more!

If you or your kids struggle with the taste of eggs, try switching to see whether or not it’s a change you’d like to make. With that said, I only trust one brand for my eggs, and that is the President’s Choice (PC) that we have available in Canada. I’ve tried buying free run and organic at other stores, and they all taste like crap.

Another option is to get them fresh off the farm.

Preparation

Preparation only takes a few minutes as you’re only dicing up the peppers, mushrooms and onions. However, you can easily dice your veggies and store them in air-tight containers in the fridge and have them ready each morning throughout the week. This way you really don’t have to spend any extra time in the kitchen, save the 3 minutes or so, that it takes to sauté.

Variations

One thing I love about making scrambled eggs is the fact that they are a great way to clean up your fridge. Leftover breakfast sausages, tomatoes, spinach, and kale are just a few examples that you can throw in with your eggs and end up with a delicious meal.

Another thing that you can try is adding your favorite herbs and spices!

Scrambled Eggs With Peppers and Mushrooms

Here is a healthy way to start your day. Kids and adults will enjoy this recipe.

Ingredients

  • 1 tbsp butter
  • 1/2 cup green bell pepper, diced
  • 1/2 cup cremini mushrooms, diced
  • 1/4 cup onion, diced
  • 4 eggs
  • 2 tbsp heavy cream
  • 1/4 tsp sea salt
  • 1/8 tsp black pepper

Instructions

  • On medium heat, melt butter in a small frying pan. Saute mushrooms, peppers and onions until they begin to change color, about 3 minutes.
  • In a small bowl, whisk the eggs. Add the cream, salt and pepper, and whisk again.
  • Pour into the frying pan over the veggies. Keep stirring the eggs until done.
