Cucumbers with Buttermilk

If you’re looking for a quick and easy healthy snack idea, then look no further than this recipe for cucumbers with buttermilk. It’s not only healthy, but delicious and filling as well! Best of all, you can enjoy this any time of day! It makes for the perfect afternoon or bed-time snack!

Cucumbers are great for the summer because they contain a lot of water, thus helpful in keeping you hydrated when the weather gets hot. I love to eat them with just a bit of sea salt, but sometimes you want a little more… and this is it!

This recipe can be served immediately, but for even more flavor you can chill this in the fridge for an hour or two. You can also blend this up for a cold soup, however, that changes the flavor a lot and isn’t near as delicious as when you eat it this way.

I grew up on cucumbers and buttermilk. We loved this so much that sometimes we’d make a meal out of it, especially in the summer when we could pick the cucumbers fresh from the garden.

Cucumbers go really well with fresh dill. So if you have it handy, you can use that as a garnish. If not, it’s delicious without it too!

To Peel or Not to Peel?

It’s your choice as to whether or not you want to peel your cucumbers. The skin is actually where most of the nutrition is at. So by peeling them you’re actually throwing away valuable nutrients.

It you’re worried about pesticides, wax and other stuff that might be lingering on the peel you can simply soak them in some apple cider or white vinegar water. Another option is to spray them down and then give them a good rinse. The vinegar helps to release the possible wax along with other unwanted residues, thus making it perfectly safe for you to consume the peels.

Cucumbers with Buttermilk

This recipe for cucumbers and buttermilk is the perfect snack idea for any time of day!

Ingredients

  • 1 English cucumber, diced
  • 1 cup buttermilk
  • 1/2 lemon
  • 1/2 tsp. sea salt

Instructions

  • Finely dice your cucumbers and put into a medium-sized bowl. Add the rest of the ingredients and enjoy!
