Not only is this pineapple coconut smoothie recipe healthy for you, but it’s also delicious and filling! It’s quick and easy to whip up in a blender and makes for the perfect snack any time of day.

This recipe makes just over 3.5 cups, enough for two people to enjoy.

You can make this with fresh or frozen fruits. I like to measure out the pineapple and banana and freeze them to have them handy. The Greek yogurt and coconut can also be frozen along with the fruit if you like.

Pineapple Coconut Smoothie Recipe

A quick and easy Pineapple Coconut Smoothie Recipe to make as a snack or dessert. It's delicious, healthy and filling!
Servings: 3 cups

Ingredients

  • 2 cups pineapple
  • 1 banana
  • 1 cup coconut milk canned
  • 1/4 cup pineapple juice
  • 1/4 cup plain Greek yogurt
  • 1/4 cup coconut flakes unsweetened
  • 1 tbsp honey
  • 2 tsp vanilla extract

Instructions

  • Add all ingredients into a blender and blend until smooth.

Fun Facts About Pineapples

1.) Pineapples contain an enzyme called bromelain that can help in digestion, making it a great food to eat before or after a meal. Bromelain also helps to protect against inflammation.

2.) Pineapples are also high in vitamin C to help boost your immune system.

3.) Pineapples can take up to almost 3 years to fully mature.

4.) Only one pineapple can grow on one plant at a time.

5.) You can grow your own pineapple by cutting of the top and planting it in soil. It makes for a nice houseplant, and if grown under the correct conditions, you may even be able to harvest a pineapple after several years.
