Breakfast Casserole with Hash Browns and Ham

Here is an easy breakfast casserole with hash browns and ham. I used a pre-cooked pack of ham, but really, any ham can be used to make this. It’s delicious, and the perfect treat for your family on weekends or any day of the week when you have time to make a real breakfast.

Serve this up with fried or scrambled eggs, toast and cereal for a delicious and filling meal. All you need is about an hour and fifteen minutes from start to finish. Best of all, the entire family is going to love this!

The Ingredients

Frozen hash browns. I get mine frozen in the frozen food section. They come diced, making it quick and easy for you to use.

Greek yogurt. I like to use plain Greek yogurt, but you can also substitute with sour cream if you like.

Cream of potato. It’s a potato dish, so cream of potato just makes sense, right? Use your favorite brand.

Diced ham. I like to get the smoked or precooked packs…. but if you cook your own ham from scratch, that works too!

Onions. Yellow or white is my preference, but really you can substitute with anything. Green onions are really good too!

Bell pepper. Orange, red or green… they all taste great in this recipe!

Cheddar cheese. I prefer Cheddar, but you can also go with half and half with mozzarella or any other cheese that you like.

How to Make Breakfast Casserole with Hash Browns and Ham

The quickest way to make this is to just throw all the ingredients together into a bowl. Then grease a casserole and bake it until done. BUT, if you’re like me, and like the taste of sautéed onions and vegetables, you can saute the onion, pepper and ham prior to mixing with the other ingredients. Both ways are delicious!

You can make this ahead the night before by mixing all ingredients, except the hash browns, in a bowl. Then the next morning simply add the hash browns to the mix, transfer to your casserole dish and wait for it to bake! Easy peasy!

Breakfast Casserole with Hash Browns and Ham

An easy recipe for a breakfast casserole with hash browns and ham. It's perfect for weekends when the rest of the family sleeps in, giving you more time to cook.

Ingredients

  • 4 cups hash browns, diced and frozen
  • 1/2 cup plain Greek yogurt
  • 1 (384 ml) can cream of potato
  • 1 cup ham, cooked and diced
  • 1/2 cup onions, diced
  • 1 bell pepper, diced
  • 2 cups cheddar cheese, divided

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Mix all ingredients together in a bowl along with half the cheese.
  • Grease a small casserole dish, and transfer ingredients.
  • Sprinkle with remaining cheese. Cover and bake for about 50 minutes.
