Tomato Cabbage Soup
This cabbage and tomato soup recipe is quick and easy to make, and can be made with or without chicken or turkey meat.
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups cabbage, chopped
- 1 carrot, diced
- 1 zucchini, diced
- 4 cups chicken broth
- 1 284ml can tomato soup
- salt and pepper to taste
- Optional: 2 cups cooked chicken or turkey, diced
In a large pot, heat olive oil on medium heat.
Add the onions and sauté for about 2-3 minutes.
Add the garlic and sauté for another 1-2 minutes.
Add the cabbage, carrots, peppers, and zucchini. Sauté for about 5-10 minutes until cabbage begins to wilt.
Add the chicken broth and tomato soup. Stir to combine and bring to a boil. Cover and simmer for about 20-30 minutes until vegetables are cooked.
Serve with cream or lemon or lime juice.
