Ham and Broccoli Stir Fry

This ham and pineapple stir fry recipe is the perfect addition to any bowl of rice. It's healthy and nutritious and kids love it!

Ingredients

  • 2 tbsp butter
  • 3 green onions, diced
  • 2 cups smoked or cooked ham, cubed
  • 4 cups broccoli florets
  • 1 red bell pepper, diced
  • 2 cups pineapple, diced

Sauce

  • 1 cup pineapple juice
  • 1/3 cup honey
  • 3 tbsp corn starch
  • 1/4 tsp sea salt
  • 1/8 tsp black pepper

Instructions

  • In a medium sized frying pan, melt butter and add the green onion and saute for about 3-5 minutes.
  • Add in the red pepper, broccoli, ham, salt and pepper, and cook for about 5-10 minutes until broccoli is done.
  • In a small bowl combine the pineapple juice, honey and cornstarch. Add mixture to the frying pan along with the pineapple.
  • Cook for about 3-4 minutes.
  • Serve with rice.
