Easy Hash Brown Egg Casserole
This hash brown egg casserole only takes a few minutes to prep, making it a great recipe to enjoy any day of the week.
- 4 eggs
- 1 bell pepper, diced
- 1/2 cup onion, diced
- 1/2 cup Greek yogurt
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 2 cups cheddar cheese, grated and divided
Optional, over medium heat, saute onion and bell pepper for about 3-5 minutes.
Preheat the oven to 350F.
In a large bowl, whisk eggs. Add the rest of the ingredients along with half the cheese.
Stir together and transfer to a greased 8 by 8 baking dish.
Cover with tin foil and bake for 50-60 minutes.
